Mushrooms

I used closed-cup mushrooms; however, use Chestnut mushrooms instead if you prefer. They are a delectable variety of mushrooms that have gained popularity in the culinary world. These earthy and flavorful mushrooms are widely cherished for their rich nutty taste and meaty texture, making them a versatile ingredient in various dishes.

Cream

My favourite plant-based cream that I love is coconut collab cream. Found in supermarkets in the UK.

  • Mushroom Selection: Choose fresh and high-quality mushrooms for the best flavour. White button mushrooms or closed-cup mushrooms work well, you can experiment with wild mushrooms like shiitake or oyster for a more complex taste.

  • Creamy Sauce: You have a few options for the luscious and creamy base. One popular choice is to use white sauce and cream as per this recipe, which adds richness. Alternatively, you can use a combination of cream and chicken or vegetable broth for a lighter version.

  • Herb Enhancements: Fresh herbs bring a bright and aromatic element to your mushroom pasta. Opt for herbs like thyme, rosemary, sage or parsley. Add them to the cooking process at the end to preserve their flavours and colours. Try deep frying a little of the herbs to garnish your pasta dish.

  • Pasta Perfection: Cook your pasta of choice according to the package instructions until it's al dente. Reserve some of the pasta water before draining, as it can be used to adjust the sauce's consistency later on. Always salt the pasta water liberally to enhance its flavour.

  • Marrying Pasta and Sauce: Add the cooked pasta to the pan with the mushroom sauce. Allow them to cook together on low heat for a couple of minutes. This step helps the pasta absorb the flavours of the sauce and creates a harmonious blend.

  • Adding meat: If you are not vegan, add some chicken to the pasta.

  • Finishing Touches: Add a sprinkle of grated vegan Parmesan to elevate the taste. It adds a delightful salty note. You can also garnish it with a drizzle of truffle oil or a sprinkle of fresh herbs for added elegance.

Storage & reheating

The pasta will keep in the fridge for 4 days and can be reheated in the microwave for a few minutes.


Makes 2 portions - 20 mins prep time


Step by Step

Recipe

  • 4 tbsp olive oil

  • 1 medium onion diced

  • 2 cloves of garlic chopped

  • 100 g gluten-free pasta

  • 125g mushrooms sliced

  • 1 quantity white sauce - recipe here

  • 1/2 bunch tarragon

  • 1 pot of Plant-based cream

  • salt/pepper

Method

  1. Make a quantity of white sauce and leave to one side.

  2. To cook the pasta, follow the instructions provided on the packet.

  3. Sweat the onions and garlic on a medium heat till soft with some olive oil and seasoning.

  4. Add the mushrooms and sweat till soft.

  5. Add the chopped tarragon and white sauce and simmer for 5 minutes.

  6. Blend half this mixture with a stick blender, then add back to the saucepan and add the pasta and the cream.

  7. Finished with some deep-fried tarragon ( optional)
