I absolutely love a potato salad.I think it’s incredibly versatile and can be served alongside meat and fish for a BBQ or as part of a salad combo.

The mayo that I used is my homemade vegan recipe with no eggs. It only takes 5 minutes, and you can find the recipe here. Its so delicious and the homemade mayo works so well with the taste of the different types of onion which add a fantastic texture to this dish. This salad will keep in the fridge for five days.

Potatoes

I used a normal bog standard new potato. You could also use a normal potato peeled and diced, which I do on occasions.

Mayonnaise

If you are vegan, use my homemade mayo recipe here. It takes 5 minutes to put together and is so delicious. Or just use your regular brand.

Makes 6 portions - 45 mins prep time


Step by Step

Recipe

  • 700 g potatoes sliced or quartered

  • 250 ml mayonnaise ( try my vegan recipe)

  • 1 red onion ( 1/2 sliced into moon shapes the other 1/2 finely diced)

  • 30 g chopped chives 5 spring onions sliced

  • 1/4 red onion sliced

Method

  1. Cook the potatoes in salted water till soft ( but not mushy) Drain and refresh with cold water.

  2. Make sure the potatoes are dry. Pat with a paper towel if you need to.

  3. Add the mayo, the onions and chives, leaving some for garnish.

  4. Transfer to a bowl and garnish with the remaining onions and chives.

Variations

You could add chopped garlic to this recipe, or even grated eggs if your not vegan.
