Notes on ingredients

Olive oil

I recommend using mild olive oil or a really good quality cold-pressed extra virgin olive oil for this vegan mayo recipe. If you're looking for alternatives, you could use avocado, hemp, or walnut oil instead.

Mustard

I used Dijon mustard for this vegan mayo recipe. You could use wholegrain or French or omit this if you prefer. Take a look here for gluten-free brands of Dijon.

Apple cider vinegar ( with the mother)

Apple cider vinegar ( ACV) with “the mother” is an unrefined, unpasteurised, unfiltered version of apple cider vinegar. It’s full of gut-friendly probiotics called acetic acid bacteria. If you’ve ever bought the mother ACV, you know that it even looks different than filtered or “regular” apple cider vinegar.

Apple cider vinegar with “the mother” is darker and looks like it has stuff floating around in it, which, if you didn’t know what it was, it would make you think it was expired or contaminated. Step by Step

Recipe

  • 250 ml mild olive oil ( see notes)

  • 3 tbsp aquafab

  • 2 tsp dijon *optional

  • 2 tbsp ACV ( see notes)

  • salt/ pepper to taste

Method

  1. Add all the ingredients into a tall jug/container and blitz with a hand held blender( or nutri bullet) for 5 minutes.

  2. Transfer into a jam jar and it will keep in the fridge for 2 weeks.
