Chicken noodles with kimchi

DAIRY FREE II GLUTEN FREE

Spicy chicken noodles made with ginger, garlic, coriander, chicken topped with kimchi using beetroot noodles. I love trying new products. These noodles are egg-free, and they can be found in most superstores here in the UK.

 I thought they looked so pretty and great for those who have egg allergies. I used my homemade kimchi recipe, which is quick to prepare and put together.

This recipe has such an explosive flavour profile, so I hope your taste buds will be singing and dancing after eating this! Enjoy the party in your mouth!

Notes on ingredients

Chicken

If following a soy free diet check that the chicken has not been fed soy, as you consume what the chickens eat. So if you have an allergy please check with the supermarket/brand/butchers first. You could also swap the chicken for any type of meat, prawns or even organic tofu. ( organic tofu ensures it's not GM as most soy is these days.)

 Kimchi

If you haven't heard of kimchi, where have you been??? It's a Korean fermented spicy cabbage that's so delicious. It's a great natural probiotic which means it's excellent for your gut and helps with digestion. It also adds a really lovely tangy and spicy flavour to this dish. Feel free to buy your kimchi or use my quick, easy recipe here.

Soy sauce

Use dark soy sauce, not light, as the lighter variety is really salty. If you are gluten intolerant, use tamari instead of regular soy.

Noodles

The noodles I used are vegan. If you are gluten intolerant, use rice noodles instead, or use a spiraliser to make 'noodles' from fresh beetroot instead.

Tips & storage

The noodles will keep in the fridge for 4 days. To reheat either pop into a hot oven for 15 minutes,or reheat in the microwave.

Other variations to this recipe:

  • Add prawns, beef, turkey or tofu if you are vegan

  • If you could get hold of Thai/ holy basil or lemongrass that would be a superb addition

Step by Step

Recipe

  • 4 tbsp olive oil

  • 4 cloves garlic

  • 35 g ginger

  • 2 chicken breast cut into strips

  • 250 g pack stir fry vegetables

  • 1 pack of cooked beetroot noodles ( or rice noodles)

  • 50 g kimchi

  • Soy sauce

  • 30 g coriander

  • 1/2 chillies * optional

Method

  1.  Start by blending the garlic and ginger to a paste in a Nutri bullet or similar with a tablespoon of oil. If you don’t have a Nutri bullet, just grate the ginger and finely chop or crush the garlic.

  2.  Put the paste into a wok and fry for a minute, then add the chicken and stir fry for 5- 8 minutes.

  3. Add the vegetables and chilli if using and stir fry for a couple of minutes.

  4. Add the noodles, kimchi and about 12 dashes of soy sauce, stir fry for 5 minutes or till heated through.

  5. Sprinkle over the coriander and serve.
