Delicious puffed quinoa and chocolate bites. They take 5 mins to put together and not too long to decorate. Great to get the kids involved in decorating too! It’s a perfect recipe to gift to a friend or your loved one. I made these for valentines day, but there’s no reason why you can’t eat them any other time of year. Give yourself a little bit of love too!

Notes on ingredients & substitutions

Chocolate

There are so many chocolate varieties out there that are suitable for dietary restrictions. Here are my top recommendations.

Soy-free/vegan chocolate; click here.

Dairy-free/vegan dark chocolate; click here.

For healthier raw chocolate/ vegan/refined sugar-free, click here. ( think of raw chocolate as chocolate without all the junk and nasty added ingredients).

Or try my raw chocolate recipe and use it in place of the quantity stated in the recipe. Click here for my raw chocolate recipe.

When you buy dark chocolate, the higher the cocoa content, the more bitter. If you prefer your chocolate sweeter, add a little agave or maple to the chocolate mixture. Or opt for 50/60% cocoa solids.

Dairy-free white chocolate; click here

Puffed quinoa

Puffed quinoa has a light and airy texture similar to puffed rice. You can buy it in health food stores or online. Use puffed rice instead if you cannot get hold of puffed quinoa.

Rose petals

I wanted to be fancy. I bought crystallized rose and violet petals and a mixture of pretty petals from a company called Sous chef.

Tips

What other decorations can I use instead?

  • Hundreds & thousands

  • Coconut

  • Chopped nuts

  • Cake decorations ( supermarkets carry lots of pretty options)

  • Cacao nibs

  • Chocolate vermicelli

  • Chocolate shavings

How long do they last?

If you don’t eat them immediately, they will last longer! ha ha They can keep in the fridge for over a week.

Where can I buy a heart-shaped chocolate mould?

Mine is an ice cube tray I bought in Ikea a million years ago. You can buy these chocolate moulds from Amazon or Lakeland. OR google chocolate moulds.

Makes 16 hearts - 1hr prep time & chilling time

Equipment

heart shaped mould

Step by Step

Recipe

Filling

  • 20 g puffed quinoa

  • 15 g coconut oil ( makes the chocolate a little softer)

  • 80g dark chocolate

Decorations

  • 200 g dark chocolate melted

  • 1 tsp coconut oil

  • 1 bar dairy free white chocolate ( see notes)

  • Rose petals ( see notes)

Method

  1. Melt the filling ingredients - the chocolate and coconut oil on the stove in a small saucepan or a bowl in the microwave. Then add the quinoa and stir till coated with the chocolate.

  2. Melt the chocolate and coconut oil to decorate, and remove the quinoa bites from the moulds. Immediately dip it into the melted chocolate. Use the fork to lever the chocolate heart out of the bowl and scrape off any excess. Transfer the hearts to the cooling rack, so any remaining chocolate drips off.

  3. While the chocolate is still wet, decorate the hearts with whatever toppings you use.

  4. If you are using dairy-free white chocolate to decorate. Melt the chocolate on a REALLY low heat in the microwave or in a bain Marie.

NB; Dairy-free white chocolate is far more temperamental than regular white chocolate. And will likely burn if heated up too quickly. Add coconut oil to smooth out the chocolate and drizzle it over the hearts to decorate.
