Turmeric
I bought fresh turmeric from Sainsburyโs; however, you can easily find fresh turmeric in Asian/Indian stores too, and it will probably be far cheaper. If you cannot find fresh turmeric, then use 1/2 tsp of dried instead.

Garam masala/cumin/ground coriander
Check labels on masala, as some may contain chilli and are not permitted on a nightshade-free diet. I used ground cumin and coriander; these spices add a really nice warmth to the delicious sweet potato, carrot, and ginger soup. Please omit if you have an issue with spices.
Garnishes
I used a drizzle of coconut milk, coriander and red chilli flakes for garnish. Omit the chilli flakes if you are following a nightshade-free diet.

You can add parsnip, pumpkin or butternut squash for a different flavour. Make sure to keep the ratios roughly the same for best results.

Step by step
Recipe
1 large white onion, chopped
1 leek chopped
5 cloves of peeled garlic
250 g carrots, peeled and chopped
250 g sweet potato, peeled and chopped
20 g fresh turmeric or 1/2 tsp dried turmeric
65 g ginger chopped
3 chilli ( optional)
2 tsp ground cumin
2 tsp ground coriander
30 g freshly chopped coriander
30 g vegetable stock (if using the marigold brand above) or 2 cubes
Method
Sweat the first 3 ingredients till soft on medium heat.
Then add the carrots, sweet potato, fresh turmeric, ginger and chilli and cook for 8 minutes.
Then add the spices and cook out for a couple of minutes to release the flavour of the spices.
Add the stock and top up with hot water from the kettle, and simmer on medium heat till veggies are soft.
Once veggies are soft, turn the heat off and leave to cool before liquidising.
Blend the soup so it is lovely and smooth.
I topped the soup with small cubes of roasted sweet potato and carrot. A drizzle of olive oil and a swirl of coconut milk, red chilli flakes and fresh coriander.
