Notes on ingredients for this healthy Sweet Potato Carrot And Ginger Soup

Turmeric

I bought fresh turmeric from Sainsburyโ€™s; however, you can easily find fresh turmeric in Asian/Indian stores too, and it will probably be far cheaper. If you cannot find fresh turmeric, then use 1/2 tsp of dried instead.

Stock

I have listed some stocks below that are compliant with different types of diets for this sweet potato carrot and ginger soup.

Yeast-free, Gluten-free, Vegan - Marigold brand (Some products contain potato starch, but there are two varieties that do not. Please read the labels carefully.)

If this recipe needs to be free of the top 14 allergens, none of the stocks on the market will be suitable, as they almost always contain celery.

Garam masala/cumin/ground coriander

Check labels on masala, as some may contain chilli and are not permitted on a nightshade-free diet. I used ground cumin and coriander; these spices add a really nice warmth to the delicious sweet potato, carrot, and ginger soup. Please omit if you have an issue with spices.

Garnishes

I used a drizzle of coconut milk, coriander and red chilli flakes for garnish. Omit the chilli flakes if you are following a nightshade-free diet.

Recipe Tips & Variations

  • Make it spicier: Add a couple of chillies to the soup or sprinkle with chilli flakes or drizzle over some sriracha.

  • For extra protein: Stir in cooked red lentils before blending. Or you could add them when you add the stock. Be sure to stir the soup often as it cooks as lentils can sometimes stick to the bottom of the pan, causing it to burn

  • Want more carbs: Add some cooked brown rice to make it more filling.

  • Boost the health factor: Add a pinch of black pepper to enhance turmericโ€™s absorption.

Serving Suggestions

Serve your golden turmeric soup with:

  • Warm, crusty bread

  • A dollop of plant-based yoghurt

  • Fresh herbs and pumpkin seeds for crunch

  • Gluten-free croutons

  • Stir fried chickpeas with chilli and garlic

Storing & Reheating

  • Fridge: Store in an airtight container for up to 4 days.

  • Freezer: Freeze in portions for up to 3 months.

  • Reheat: Gently warm on the stove, stirring occasionally.

FAQโ€™s

Is the soup vegan?

  • This vegan sweet potato turmeric soup recipe is naturally vegan, so yes, it is vegan if you use vegetable stock and skip any dairy toppings like cream or yoghurt.

Can I use other vegetables?

  • You can add parsnip, pumpkin or butternut squash for a different flavour. Make sure to keep the ratios roughly the same for best results.

Does it work with dried ginger?

  • Fresh ginger gives the best taste, but if you only have dried, use about a teaspoon. The flavour will be more subtle.

How do I get a smooth texture?

  • Blend the soup with a stick blender or in batches in a regular blender.

Is it spicy?

  • The ginger adds a gentle warmth, but it's not hot. Add a pinch of chilli flakes if you want more heat.

Can I make it in a slow cooker?

Yes, put all the ingredients in your slow cooker and cook on low for 6-8 hours or high for 3-4 hours. Blend before serving.

Can I make it thicker or thinner?

  • To thicken, simmer for a few extra minutes with the lid off so it reduces. For a thinner soup, add more stock or water after blending.

Method

  1. Sweat the first 3 ingredients till soft on medium heat.

  2. Then add the carrots, sweet potato, fresh turmeric, ginger and chilli and cook for 8 minutes.

  3. Then add the spices and cook out for a couple of minutes to release the flavour of the spices.
