This vegan chocolate mousse is quick and easy to prepare with only three ingredients. It takes 20 minutes to assemble. Aquafaba, which is chickpea water makes this delicious vegan dessert extra fluffy and luxurious. It’s by far the tastiest and easiest mousse I have ever made. It tastes so incredibly decadent, indulgent and rich.

Notes on ingredients & substitutions

Aquafaba, what is it?

It’s basically chickpea water, and it literally has magical qualities. I mean, who knew that you could make fluffy meringues and mousses with chickpea water!! It’s astonishing, but it’s true! The starchy liquid is a great binder, but what really makes it magical is that it whips and creates a foam. Aquafaba is, therefore, able to trap air, giving items structure.

Chocolate

A dark chocolate bar with a cocoa content of 70% means that 70% of the chocolate has been made from ingredients found purely in the cocoa bean. The remaining 30% will consist of other ingredients, such as sugar, predominantly but may also include, for example, tiny percentages of vanilla flavouring. The higher the percentage, the stronger the cocoa flavour, which means it will be more bitter and less sweet.

 Use whatever chocolate you find palatable. Sometimes I will use 70/80% in my cooking and add a little extra sweetener like honey/agave/maple syrup. Dark chocolate is almost always dairy free unless it’s a cheap brand where they will add crappy fillers. My fave brands to eat and use in cooking are ( also allergy friendly)

    If you have a soy allergy, always choose raw chocolate, as this will not have any soy ingredients added. (Always check on the label, though.)

Tips

How long does it take to whip aquafaba?

It takes between 10 - 15 minutes. I would recommend using a stabilizer like cream of tartar, 1/4 tsp lemon juice or apple cider vinegar, making the aquafaba hold its shape better.

Why is my mousse grainy?

If your aquafaba chocolate mousse gets grainy, it’s because your melted chocolate while it is still too hot. Make sure to let it cool down for at least 10 minutes to prevent this from happening.

Does the mousse stay fluffy in the fridge?

I kept this in the fridge for four days, and it stayed perfectly fluffy and light. It did not collapse or change form.

What else can I add to this mousse?

Some great variations to this mousse:

  • Add orange zest & essence for a chocolate & orange version, and garnish with orange segments.

  • Add mint flavouring and garnish with mint and coconut whipping cream.

  • You could layer the mousse with berries and top it with a swirl of coconut whipping cream.

  • You could crumble some vegan & gluten-free biscuits in between the layers for some extra crunch. Try these cookies. They are my FAVE! ( remember to add my code KAMSOKHI10 at the checkout to receive £10 off your first order of £50)

  • Add a shot of cold espresso to the mousse


Makes 4 portions - 15 mins prep time - 2 hours chilling time


Step by Step

Recipe

  • 7 oz chocolate ( see notes)

  • 170 ml aquafaba ( either drained from 2 cans of chickpeas OR try this brand

  • 1/4 tsp of either lemon juice/ apple cider vinegar(ACV) OR cream of tartar

Decoration/topping

  • 4 squares chocolate chopped

  • Raspberries

  • Mint sprigs

  • Mixed flower petals - shop here

Method

  1. Place broken-up chocolate in a glass or metal bowl suspended over a water bath. Make sure the bowl with chocolate does not touch the water underneath. The key to success is not to overheat the chocolate and to be gentle with it – it’s a temperamental ingredient.

  2. Whip the aquafaba with either lemon juice, ACV or cream of tartar for 10-15 minutes on high speed till the liquid turns into stiff peaks that hold its shape.

  3. Add one-third of the aquafaba to the chocolate and fold in. Then add the next third, fold in gently, and add the remaining and fold so no white streaks are remaining.

  4. Divide the mousse into four glasses, jars or ramekins, and decorate with the toppings.

  5. Leave to set in the fridge for a couple of hours till chilled, and enjoy!
