This recipe is by far the most delicious chocolate truffles ever! They are so creamy and chocolatey, and they literally melt in your mouth. The best part? They are also healthy! I can't believe it, but my secret ingredient is avocados. I was sceptical at first, but the creaminess and texture of the avocados are perfect in this recipe.

It's a super quick recipe to prepare and great to have on hand as a snack or even for the kids. They taste like a rich chocolate mousse encased in chocolate - so heavenly! And the best part is, you can't even taste the avocado. Yum!

Notes on ingredients

Chocolate

I like to use chocolate with a cocoa content of 70%, meaning that 70% of the chocolate has been made from ingredients in the cocoa bean. The remaining 30% will consist of other ingredients, such as sugar, predominantly but may also include, for example, tiny percentages of vanilla flavouring. The higher the percentage, the stronger the cocoa flavour, which means it will be more bitter and less sweet.

Use whatever chocolate you find palatable. Sometimes I will use 70/80% in my cooking and add a little extra sweetener like honey/agave/maple syrup. Dark chocolate is almost always dairy free unless it’s a cheap brand where they will add crappy fillers. My fave brands to eat and use in cooking are also allergy friendly

    If you have a soy allergy, always choose raw chocolate, as this will not have any soy ingredients added. (Always check on the label, though.)

Sweetener

Choose agave, coconut blossom nectar or maple syrup instead of honey if you are following a vegan diet. Take a look at the sweeteners that I have recommended here.

Cacao powder

Please don’t confuse cocoa powder with cacao powder. Cocoa powder is it’s roasted to death, cousin. Cocoa powder has a more intense flavour because it has been roasted so If you do use that instead maybe use half the quantity I have stated in this recipe. Other ideas to decorate and flavour your truffles

  • Use orange, mint, strawberry or raspberry extract instead of vanilla. Take a look at some great options here.

    Alternative truffle toppings try:

  • Matcha

  • Cacao powder

  • Melted chocolate ( freeze the truffles first, then coat in chocolate.)

  • Freeze-dried fruit powders to purchase. Take a look here

  • Crystallised ginger

  • Chocolate vermicelli

  • Mini chocolate chips

  • Espresso/ coffee powder

  • Chilli flakes

  • White chocolate Take a look here for a dairy-free option.

These truffles will be fine in the fridge for up to 5 days. ( if they last that long.)

Step by step

Recipe

  • 100 g dark chocolate 70% cocoa solids

  • 3 tbsp cacao butter ( or coconut oil)

  • 1 tsp vanilla extract ( not essence)

  • 1 large avocado ( 170g)

  • 3 tbsp raw cacao powder

  • 3 tbsp honey/agave/maple syrup

  • pinch sea salt or Himalayan pink salt

Truffle toppings I used

  • desiccated coconut

  • melted chocolate

  • rose petals

  • chopped nuts

  • milled pumpkin seeds

  • freeze-dried raspberry/strawberry pieces

Method

  1. Start by melting the dark chocolate and cacao butter on very low heat.

  2. In a food processor, add the rest of the ingredients and add the melted chocolate mixture. Pulse till completely smooth.

  3. Transfer into a glass bowl or container and leave in the fridge to set for a couple of hours.

  4. When the mixture is set, roll into small balls and coat in your toppings

  5. Pop them back in the fridge to chill for 1 hour and then devour and enjoy!
