Notes on ingredients for prawn canapes
Spices
I used a fajita spice that you can readily buy in most supermarkets. You can substitute other spices: Cajun seasoning, or harissa. Always ensure that the spices you use are certified gluten free.
Prawns
I used fresh prawns however, you could use frozen prawns, too, as it will be a cheaper option. If you are using fresh prawns here’s a great video showing you how to prepare them.

Tips for prawn canapes
Make the avocado dip a few hours ahead of time, and cover with a squeeze of lime juice to stop it going brown.
Using frozen, uncooked prawns will be a time saver; ensure they are fully defrosted first.
For a twist, use tortillas instead of cucumbers. Simply use a circular cutter to cut rounds and bake them until crispy. Once cooled, add the avocado and cooked prawns.
Also, prepare the marinade ahead of time and leave it in the fridge until you are ready to cook and assemble.

Step by step
Recipe
100ml Olive oil
1.5 tsp Fajita seasoning (gluten-free if required )
2 Cloves garlic
12 Raw prawns
1 Medium cucumber
1 Large avocado
Zest and juice of 1 lime
10g coriander
12 Raw prawns
Method
Blend the garlic with the oil and fajita seasoning in a nutri bullet or similar, then pour the marinade over the prawns and leave the flavours to mingle and party with each other for 30 minutes.
Slice the cucumber with a 1cm thickness, then in a bowl, mash the avocado and add the juice and zest of the lime by using either a grater on the finest section or by using a microplane then add seasoning and chopped coriander and leave to one side.
Saute the prawns or chargrill them, and add some seasoning during cooking.
To assemble, spoon the avocado mixture onto the cucumber and add your prawn on top, I garnished mine with spring onion, but you can leave them as they are as they still look really good.
