Please only use coconut milk made with 100% coconuts. Most supermarket brands contain questionable gums like carrageenan, which can curdle sauces and have harmful effects on your health as well as ruining your cooked dishes. Tips
When making this recipe, use a medium-sized saucepan and simmer on low to medium heat to avoid boiling over.
When making caramel, only add salt at the end. If you add it initially, the mixture will reduce and thicken, resulting in overly salted caramel as the flavours intensify during liquid reduction.
Use this caramel in baking, drizzled over ice cream or desserts.
This caramel will keep in the fridge for 4 days, it also freezes well too.

Recipe
2 tins coconut milk
160g or 1 cup of coconut sugar
2 tsp coconut oil
1 tsp sea salt
Method
Add all the ingredients to a saucepan and whisk together.
Simmer on a low/meduim heat for 35 minutes uncovered whisking every 5 minutes so it doesn’t catch on the bottom
Once reduced it will be really thick and creamy, pass through a fine sieve and add the sea salt.
