Chocolate

I used vegan, gluten-free, and sugar-free chocolate, specifically 100% cocoa chocolate. This type of chocolate is made solely from cocoa beans, with no added sugar, milk, flavourings, or vegetable fats—just pure quality chocolate. The brand I chose was Montezumas, which I purchased at Sainsbury’s.

It can also be found at Waitrose or online. I purchased it as a chocolate bar and chopped it into small chunks, as finding high-quality sugar-free vegan chocolate chips is quite difficult unless you search online.

I always choose high-quality chocolate because a cheap chocolate bar won't taste as good and doesn't melt as easily. High-quality chocolate tastes less processed, melts smoothly, and helps create a beautiful coating for strawberries after dipping.

Dark chocolate is:

  • High in fibre and antioxidants 

  • It may help with cellular protection, heart health, and reducing inflammation 

  • A good choice for people following a keto or paleo diet, or those watching their sugar intake

Strawberries

When sourcing strawberries, aim for the ripest and reddest ones available. I typically choose between an organic variety or the "Taste the Difference" option from Sainsbury's. Unfortunately, February is not a strawberry season in the UK, and most strawberries during this time tend to be tasteless and lacklustre

. For a good-quality strawberries, be prepared to spend a bit more. If I am making these chocolate covered strawberries for someone, I will usually buy 3 punnets so I can choose 12 that are the same size. Im just OCD like that.

Tips for perfect chocolate covered strawberries:

  • Pick good strawberries. 

    Choose firm, ripe strawberries without bruises and if possible, strawberries that are red all the way up to the stem.

  • Use room temperature strawberries and DRY THEM really well. 

    Take the strawberries out of the fridge 15-30 minutes before dipping them. Wash them and gently dry them all over with a paper towel. You want to make sure they’re very dry, otherwise the chocolate won’t set on them properly.

  • Temper the chocolate.

  • Tempering chocolate is essential for achieving beautiful, glossy chocolate-covered strawberries, as it helps prevent them from looking streaky, grey, or dull once the chocolate sets. Contrary to what many might think, tempering chocolate is not as difficult as it sounds. When done correctly, it results in a professional-looking shine.

    Melt all but 2 chunks of chocolate. Once you’ve melted the chocolate and it’s smooth, remove the bowl from heat and add the reserved chocolate and stir till melted and smooth then your chocolate is ready. This technique will ensure your chocolate-covered strawberries look their best.

Are these chocolate covered strawberries sugar-free?

  • You can use 100% dark chocolate paired with natural toppings like nuts, coconut, and cacao nibs instead of sugary options like hundreds and thousands or cake sprinkles. I’ve found that ripe red strawberries are naturally sweet, so they work well without adding a really sweet chocolate. Plus using the natural toppings they will also be keto friendly!

How long do chocolate covered strawberries last?

  • Chocolate covered strawberries are best enjoyed within 1 or 2 days maximum.  The chocolate on the strawberries will cause them to sweat and release moisture, so they are really best enjoyed the same day they are made. They need to be kept in the fridge.

How to get chocolate to stick to strawberries?

  • The key to making chocolate-covered strawberries is that the strawberries must be very, very dry. If you have any water left from rinsing or any sticky bruised areas, the coating doesn't “stick” to the strawberry as well. Drops of water can also make your chocolate seize up and become grainy as you dip.

What kind of chocolate is best for dipping strawberries?

  • I prefer bittersweet or semi-sweet chocolate, but milk chocolate works well if you're okay with dairy! I also make white chocolate-covered strawberries and drizzle dark chocolate over them for a spectacular finish.

Do strawberries need to be cold before dipping in chocolate?

  • How do you prevent condensation occurring on the chocolate and in between the chocolate and the berry? It is very hard because strawberries are made of 90% water. Do not dip when they are very cold, try to use room temperature strawberries.

Why isn't my chocolate sticking to my strawberries?

  • If there's one thing chocolate doesn't mix with, it's water. If you have trouble getting the chocolate to stick to the surface of the berries, they could still be damp. Leave them on a towel after washing and be sure to dry all sides before coating with chocolate.

How do you thin chocolate for dipping strawberries?

To thin melted chocolate, add a small amount of neutral oil, like coconut oil or cocoa butter, stirring gently until it reaches the desired consistency. Melt slowly to avoid overheating, and keep water out to prevent the chocolate from seizing

Step by Step

Recipe

  • 3 punnets of strawberries

  • 100g chocolate of your choice see notes for info

  • 1/4 tsp coconut oil

  • Toppings like nuts, coconut, and sprinkles ( see notes for more ideas)

Method

  1. Line a baking sheet with greaseproof or parchment paper.

  2. Rinse the strawberries under cool running water and gently pat dry. The strawberries must be completely dry before dipping, so spread them out and let them air-dry if necessary.

  3. Melt the chocolate and oil in the microwave, reserving 2 chunks of chocolate for tempering. Place the chocolate in the microwave and heat it in 30-second intervals, stirring each time, until it is fully melted. Once melted, add the reserved chunks of chocolate to the mixture and stir until they are completely melted.

  4. Working with one strawberry at a time, pick up a strawberry by the stem or insert a cocktail stick into the top of the strawberry and dip it into the chocolate. Turn or swirl the strawberry as needed to coat it in chocolate completely.

  5. Shake off any excess chocolate and immediately dip into your chosen toppings, or lay the strawberries on a baking sheet lined with greaseproof paper and sprinkle over desired toppings.

  6. Leave to set in the fridge for an hour. And enjoy!
