Vegan and gluten-free Easter eggs that are so damn tasty you won’t actually believe they are healthy too! Super easy and quick to make. You could even get the kiddies to help. These eggs are great for those with intolerances and allergies who don’t fancy spending a fortune on speciality eggs. They are also perfect for gifting to friends, which I love doing.
Notes on ingredients & substitutions
Chocolate
I like to use chocolate with a cocoa content of 70%, meaning that 70% of the chocolate has been made from ingredients in the cocoa bean. The remaining 30% will consist predominantly of other ingredients, such as sugar, but may also include, for example, tiny percentages of vanilla flavouring. The higher the percentage, the stronger the cocoa flavour, which means it will be more bitter and less sweet.
Use whatever chocolate you find palatable. Sometimes, I use 70/80% of my cooking ingredients and add a little extra sweetener like honey, agave, or maple syrup. Dark chocolate is almost always dairy free unless it’s a cheap brand where they will add crappy fillers. My fave brands to eat and use in cooking are ( also allergy-friendly)

If you have a soy allergy, always choose raw chocolate, as this will not have any soy ingredients added. (Always check on the label, though.)
Chocolate spread
I used a brand that is vegan, gluten-free, dairy-free, palm-free, soy free and not filled with crappy ingredients either. YAY! The ingredients are Cashew Nuts (35%), Coconut Sugar, Hazelnuts (19%), Cacao Powder (7%), Coconut Oil, Lucuma Powder (2%.). You can buy this here.

Tips & storage
These chocolates will keep for weeks. However, I’m sure that they will be eaten within days! If you don’t want a chocolate spread, use crunchy nut butter instead.
Variations
Try chocolate orange eggs. Use 1 tsp of orange extract in the recipe. Use this Chocolate & orange spread.
Use any nuts you prefer. Almonds or macadamia nuts would be a good choice.
Use any decorations. I used hundreds & thousands, some bronze cake decorations from the supermarket, crystallized rose, and violet petals from sous chef. Take a look here.

Makes a lot of portions - 15 mins prep time - 1 hr chill time ( for the eggs not you)
Step by Step
Recipe
150 g chocolate ( see notes)
55 g chopped roasted hazelnuts
2 heaped tbsp chocolate spread (see notes)
Method
Melt the chocolate in the microwave or a bowl over a saucepan with simmering water.
Add the hazelnuts and chocolate spread.
Spoon into the moulds, level them out, and chill till set.
Turn out the eggs and decorate by drizzling over some more chocolate and sprinkling your decorations. Or dip half of the egg into melted chocolate and then into your sprinkles.
ENJOY! And do a happy dance!
