Notes on ingredients

Coconut sugar

It is an unrefined alternative to traditional cane sugar, boasting a rich caramel-like flavour and a hint of butterscotch. Made through a simple process of collecting and evaporating the sap, coconut sugar retains more nutrients than refined sugars, including minerals like iron, zinc, potassium and vitamins B and C. Moreover, it has a lower glycemic index than traditional sugars, making it a popular choice for those seeking to manage their blood sugar levels.

With its delightful taste and nutritional benefits, coconut sugar has gradually gained popularity among health-conscious individuals and those adhering to paleo or vegan diets. Buy from:

  • The grape tree - find in most high streets or order online

  • Well easy - an online health food store with discounted prices

  • Some supermarkets

  • Health food shops

Coconut milk

Please only use coconut milk made with 100% coconuts. Most supermarket brands contain questionable gums like carrageenan, which can curdle sauces and have harmful effects on your health as well as ruining your cooked dishes. Check out more information on the risks of carrageenan here. Using pure coconut milk is essential for a thick and creamy caramel. I buy my coconut milk;

Ingredients

Tips

  • When making this recipe, use a medium-sized saucepan and simmer on low to medium heat to avoid boiling over.

  • When making caramel, only add salt at the end. If you add it initially, the mixture will reduce and thicken, resulting in overly salted caramel as the flavours intensify during liquid reduction.

  • Use this caramel in baking, drizzled over ice cream or desserts.

  • This caramel will keep in the fridge for 4 days, it also freezes well too.

40 mins prep & cooking time

Step by step

  1. Add all the ingredients to a saucepan and whisk together.

  2. Simmer on a low/meduim heat for 35 minutes uncovered whisking every 5 minutes so it doesn’t catch on the bottom
