Carrots
I used mainly grated carrots for this recipe; however, feel free to use grated courgettes instead or even a mix of both.
Seasoning
I used onion powder, garlic powder, salt, and pepper to make these gluten free tacos. You can, however, add dried or fresh herbs or even spices. Try the following:
Half a teaspoon of cumin and garam masala with some dried red chilli flakes
Chopped tarragon, basil, chives or coriander
I love fajita, cajun or dried harissa spice, which adds a lovely flavour burst
Eggs
I used free range organic eggs for this gluten free taco recipe. If you have issues with eggs, then use chickpea flour/gram flour instead to make easy vegan tacos. Just mix it up with all the ingredients and add enough water to form a batter similar to a pancake batter to create vegan tacos.
I have made them with grated courgettes and cumin spice, but made them into a large tortilla instead, so I know it’s a recipe that works and is super tasty.

Top with crispy fried onions, sweetcorn, jalapenos, pickled onions, shredded lettuce, peppers.
These gluten free tacos can also be used as a bread substitute. I have put burgers in between two carrot tacos. Just make sure you spread each side with either a mayo, hummus or guacamole so the fillings don't fall out. They make for a really satisfying low carb, gluten free lunch idea.

They will keep well in the fridge just covered with some cling film on a plate for 3/4 days. Or you could freeze them in between pieces of parchment paper. To reheat, I would either pop them in the microwave or in the oven for a few minutes.

Makes 3 tacos - 30 mins prep & cooking time
Step by Step
Recipe
200 g grated carrots
2 medium eggs
1 tsp onion powder
1 tsp garlic powder
1/4 tsp salt and pepper
Method
Preheat the oven to 160°C, gas mark 3, or 350°F. Line a large, flat baking tray with parchment paper and set it aside.
Place all the ingredients in a bowl and mix until well combined.
Spoon the mixture onto the prepared baking tray in equal size rounds. Ensure that the mixture is evenly spread,
Place in the oven and cook for 15/20 minutes on the middle shelf.
Once cooked, leave to cool before adding your fillings.
