Notes on ingredients for Sesame, Ginger Salad Dressing

Coconut sugar

Coconut sugar is a natural sweetener made from the sap of the coconut palm tree's flower buds, not the coconut fruit itself. It has a flavour similar to brown sugar with a noticeable caramel, butterscotch taste. It is a light brown, granulated sugar that can be used as a 1:1 substitute for white or brown sugar in cooking and baking. Swap brown sugar for coconut sugar if you cannot get hold of it. You can buy this online in supermarkets ot health food stores.

Olive oil

I love extra-virgin olive oil because it is a high quality olive oil that retains more antioxidants, healthy fats, and natural plant compounds compared to other types of olive oil. These nutrients, which contribute to its healthy profile, are often lost in regular or light olive oils; therefore, choosing extra-virgin ensures you receive more health benefits.

Tips when buying extra virgin olive oil:

When shopping, select brands packaged in dark glass or metal bottles. These materials protect the oil from light and air, allowing it to stay fresh for longer. Look for a harvest date on the label rather than just a "best by" date. Itโ€™s also wise to seek seals from trusted organisations, like the Extra Virgin Alliance or a D.O.P. stamp, which verify the oilโ€™s quality and origin.

Quality extra virgin olive oil usually comes at a higher price, but its flavorful taste makes it worthwhile. The flavour should be rich with fruity, bitter, or robust notes, often finishing with a peppery bite. This makes it ideal for salads or as a dipping oil, and itโ€™s a top choice for creating vibrant salad dressings or bold vinaigrettes. Selecting the right oil will give your favourite salad dressing recipes a genuine boost.

Sesame oil

Sesame oil adds a warm, nutty flavour to many meals, particularly in Asian cuisine. Itโ€™s a go-to ingredient for stir-fries, marinades, and dressings; it works well as a finishing touch to add extra flavour. Light sesame oil can withstand higher temperatures, making it suitable for frying or sautรฉing. Toasted sesame oil, on the other hand, has a more pungent taste and is best used at the end of cooking or in salad dressings.

Youโ€™ll often see sesame oil used in a sesame ginger salad dressing where its unique taste stands out. Its natural richness works well with ginger, creating a balanced, bold flavour that lifts simple greens or noodle salads. Buy sesame oil at most supermarkets.

Ginger

Please use fresh root ginger, which can also be found at all supermarkets. Do not use ground ginger at all as a substitute, it will not have the same depth of flavour and may taste grainy.

Tahini

Tahini is sesame seed paste, and I have used it instead of mustard, which is commonly used in salad dressings, as it acts as an emulsifier. Tahini does the same thing, but it also adds a stunning nutty flavour and gives this dressing the richness and creaminess that you expect from dressings.
