I love light and fluffy pancakes for breakfast with apple and spice added! Apple Cinnamon Pancakes are a great way to start your day, and although they are full of autumnal flavour, they are perfect for any time of year. They are perfect with caramelised maple nuts and served with cool coconut yoghurt.

Notes on ingredients

Buckwheat flour

I love to use buckwheat flour in recipes for pancakes, as it adds such a wonderful nutty texture, its actually a seed and not a grain and is not related to wheat which makes it gluten-free. Feel free to swap the buckwheat flour for oat flour which you can simply do by whizzing up whole oats in your Nutri bullet, if you are gluten-free be sure to use GF oats.

Apples

Please try to get hold of these cooking apples or granny smith. With cooking apples, you have this mouth-watering tartness that you can’t get with other apples, and it really does make the dish smack a punch and will make your taste buds dance and sing, I promise.

Eggs

To make this vegan use 2 flax eggs instead. Heres a video showing you how to make them.

Tips

  • The walnuts can be made ahead of time and stored in a glass jar.

  • I batch cook my apples and sometimes freeze them so I can use them as and when I need to. So this can be prepared earlier if you wish.

  • Please do not be tempted to eat the nuts before they have totally cooled down; they will remain soft till they cool and will be really hot. Use any other nuts that you prefer instead of walnuts.

Tips on how to make the best pancakes

  • If using flax eggs leave the batter to sit for 10 minutes before cooking the pancakes so it has time to thicken.

  • Do not sub the bicarb or omit this ingredient as this is the key ingredient for fluffy pancakes .Ensure the bicarb is no longer than 6 months old, & don’t sub this ingredients this is what helps the pancakes to become fluffy.

  • Always do a test pancake first, so that you can determine if the pan is hot enough. The pan should just be smoking but not quite.

Step by step

Recipe

Maple caramelised nuts

  • 2 oz walnuts

  • 80 ml maple syrup

Cinnamon stewed apples

  • 2 bramley cooking apples

  • 35 ml honey/agave/maple

  • 1 tbsp coconut oil

  • 1/2 tsp cinnamon

Pancake mix

  • 2 eggs or 2 flax eggs

  • 1/4 pint plant-based milk

  • 1tsp bicarb

  • 1 tsp baking powder

  • 4 oz buckwheat flour

  • 1 tsp vanilla extract

Method

  1. To make the caramelised maple walnuts, pour the syrup and nuts into a small saucepan and reduce on high heat for 5 minutes till the syrup is thick, then pour onto a baking sheet lined with greaseproof paper and leave to cool.

  2. Peel, core, and chop the apples into thick slices and place into a saucepan with coconut oil, cinnamon and honey and cook with the lid on for 5 minutes till soft, leave to one side.

  3. Add all the pancake ingredients into a Nutri Bullet or similar and blend. leave to sit for 10 minutes.

  4. Heat a frying pan with coconut oil, and on medium heat, pour a little batter into the pan, and once it browns slightly on the edges and starts to bubble up like in the picture, then flip over and cook for a couple of minutes, this mixture will make 6 pancakes.

  5. Assemble the pancakes, top with the yoghurt, apples and nuts and enjoy!
