Notes on ingredients for vegan and gluten-free waffles

Buckwheat flour

Buckwheat does not contain wheat, even though it has wheat in the name. You can buy it online or in most UK supermarkets. I haven’t tried using another flour instead of buckwheat for these vegan waffles, so if you want to substitute it with another gluten-free flour, I can’t guarantee how the recipe would turn out. However, please let me know if you have succeeded with other flours!

Coconut milk

I only use coconut milk that has one ingredient: coconuts. Most of the coconut milk that you can find in the supermarket now has added gums and all sorts of emulsifiers and E numbers, which are firstly anti-inflammatory ( something you need to avoid if you have allergies or intolerances as our health is already compromised), carrageenan gum is linked to cancer and can cause IBS type symptoms ( yes shocking!). And using these kinds of milk means that sauces do not thicken and curdle. So throw them in the bin! I used biona brand coconut milk. I bought this from Amazon but recently found a cheaper place. Flax Eggs: A Simple Substitute for Eggs in Plant-Based Baking


Flax eggs are a fantastic plant-based alternative to traditional eggs and perfect to use for these vegan waffles. These "eggs" are made using flaxseeds and water, creating a gel-like mixture that mimics the texture and binding properties of eggs.
Making flax eggs couldn't be easier. Here's a simple step-by-step guide to creating your own flax eggs:

In a small bowl, combine 1 tablespoon of ground flaxseeds and 3 tablespoons of water. You can either use pre-ground flaxseeds or grind them fresh at home using a coffee grinder or blender. Mix the ground flaxseeds and water well until they are fully combined. Let the mixture sit at room temperature for around 5-10 minutes. During this time, the flaxseeds will absorb the water and thicken, creating a gel-like consistency reminiscent of raw eggs. Once the flax eggs have thickened, they are ready to be used in your recipe.

  • For those new to using a waffle maker, it's crucial to understand that cooking times may vary. This variation is primarily due to the heat of your waffle maker. Adjusting the cooking time ensures your waffles are perfectly cooked, avoiding the risk of under or overcooking.

  • You will also need to experiment with how much mixture you put into the sections, as you don’t want an overflow as you close the waffle maker.

  • A handy tip is to cook a batch of these gluten-free waffles and freeze them. This method is not only time-saving but also provides a quick and convenient breakfast option. Pop them in the toaster from frozen, and they're ready to eat when you're on the go.

What to serve with these vegan, gluten-free waffles;

  • Whipped cream - Try elmlea plant-based or coconut collab coconut whipping cream ( find in supermarkets)

  • A side of plant-based yoghurt - my fave is by coconut collab, coconut yoghurt

  • A side of berries, fruit or banana

  • Plant-based ice cream ( maybe not for breakfast, though!)

  • Melted Chocolate

What plant-based milk works best?

  • Almond, soy, or oat milk are all great options. Choose based on your taste preference and dietary needs.

How do I ensure these vegan waffles are crispy?

  • Make sure your waffle iron is preheated properly and don’t lift the lid too soon. Allow the waffles to cook until they’re golden brown and crisp.

  • Also ensure that you have brushed the waffle maker with a little oil, coconut or olive oil are fine.

Step by step

Recipe

Waffles

  • 8 oz Buckwheat flour

  • 1.5 tsp GF baking powder

  • 6 oz cooked mashed and cooled sweet potato

  • 1tsp vanilla extract

  • 2 flax ‘eggs’ or regular eggs

  • 300 ml plant based milk

Method

  1. Whizz all the waffle ingredients in a blender. If using flax eggs, let sit for 20 minutes to thicken.

  2. Spoon a few spoonfuls of batter into a hot waffle iron and cook for 12-15 minutes, until they are darker than golden brown and crispy. Don’t be tempted to check the waffles mid-cooking time, as they will fall apart when opening the waffle maker.

  3. When cooked, Serve immediately and top with desired toppings. ( see notes)
