Notes on ingredients for Fluffy American style pancakes

Buckwheat flour

I love to use buckwheat flour in recipes for pancakes, as it adds such a wonderful nutty texture. Buckwheat is a seed and not a grain, and is not related to wheat, which makes it gluten-free. Buy buckwheat flour in most supermarkets. Read more about how to cook with buckwheat in my article. A guide to buckwheat in allergy free cooking

Feel free to swap the buckwheat flour for oat flour, which you can simply do by whizzing up whole oats in your NutriBullet. If you are following a gluten-free diet, be sure to use Gluten-free oats. You could also substitute the buckwheat flour for a gluten-free blend instead.

Apples

For homemade pancakes, especially american style pancakes, try to use cooking apples or Granny Smith apples if you can. Their crisp tartness sets them apart from sweeter varieties and adds a bright kick to your recipe. This sharp flavour really brings out the best in pancakes and takes the taste to another level. Your homemade pancakes will feel fresher, more lively, and packed with real apple flavour.

Eggs

To make this vegan use 2 flax eggs instead. Heres a video showing you how to make them.

Maple syrup

I used maple syrup to caramelise the walnuts; honey or brown sugar also works well if you prefer. Maple syrup gives a lovely flavour and helps the walnuts become golden and crisp. It goes perfectly with any gluten-free pancake recipe.

Pancakes with syrup and fruit make a great breakfast. Try using caramelised walnuts as a crunchy topping for extra texture and taste for porridge too.

Milk

Feel free to use any plant-based milk you prefer. I prefer Plenish or Rude Health because they contain fewer questionable inflammatory ingredients.

Yoghurt

Coconut collab yoghurt is always my go-to, it's delicious, creamy and incredibly versatile. Find this in all supermarkets in the UK.

Tips for the Perfect American Style Pancakes

These simple tips help you make fluffy pancakes every time, whatever your diet. Enjoy your stack of warm, homemade pancakes with your favourite syrup and fruit for the perfect brunch or easy breakfast.

  • Donโ€™t worry if your pancake batter has a few lumps; mix it just enough to get the dry and wet parts together. When youโ€™re cooking, use medium heat. This way, your Easy breakfast pancakes get a lovely golden colour without burning.

  • For vegan American pancakes or gluten-free pancake recipes, If youโ€™re using flax eggs, let the batter sit out for about 10 minutes. This gives it time to thicken, making the pancakes turn out light.

  • Bicarbonate of soda is the secret behind fluffy, homemade pancakes. Donโ€™t replace it or leave it out. Pancakes will only rise well if your bicarb is fresh, so always check the date and use a box thatโ€™s less than 6 months old.

  • Itโ€™s always a good idea to cook one pancake first. This helps you check if the pan is hot enough; it should be just starting to smoke. A quality non-stick frying pan makes a big difference too, especially for a brunch pancake recipe.

  • Walnuts for your pancakes with syrup and fruit can be made ahead and kept in a glass jar.

  • I often make stewed apples in larger batches and freeze them, which saves time in the morning. Prepare your toppings in advance if you like.

  • Let the nuts cool before eating, as theyโ€™ll be soft and hot right after caramelising. Once cooled, they become crisp. Feel free to swap walnuts for any other nuts you enjoy.

FAQโ€™s About American Style Pancakes

What makes pancakes โ€œAmerican styleโ€?

  • American-style pancakes are thick, fluffy, and soft, unlike thin crepes. Theyโ€™re perfect for stacking high with syrup, fruit, or vegan toppings.

Can I make American pancakes vegan?

  • Yes! Swap dairy milk for plant-based milk, and use oil or vegan butter. You can also replace eggs with flax or chia eggs for a fully vegan pancake recipe. Read the notes on the ingredients section above for the recipe for flax eggs.

Can I make them gluten-free?

  • This recipe is gluten-free. These pancakes remain fluffy and delicious while being gluten-free and allergy-friendly.

How do I keep pancakes warm while cooking?

  • Place cooked pancakes on a baking sheet in a preheated oven at 90โ€“100ยฐC (200ยฐF) to keep them warm until the entire batch is ready.

What can I add to my pancake batter to make them fluffy?

  • To dive into a little bit of pancake science, fluffier pancakes are caused by bubbles that form in the batter followed by the solidification of those beautiful bubbles! When you add baking powder and bicarb of soda to your pancake batter, youre encouraging the release of gas, which forms bubbles in the batter.

Should I cook pancakes in oil or butter?

  • The two most popular pan lubricants for cooking pancakes are butter and oil. But which one works best? Well, that comes down to your own pancake preferences. For a crispier cake, you'll want to use a high smoke point cooking oil, such as vegetable oil. Dairy free butter is an option if you cannot eat dairy.
