Looking for some healthy eating breakfast inspiration?

The experts say that eating breakfast is the most important meal of the day.

Breakfast provides essential fuel and energy for your body going forward into the day ahead, including vitamins, minerals and glucose, all of which are essential for giving the body and brain enough energy to work at the optimum level.

Eating breakfast is proven to improve cognitive performance, concentration and alertness as the body has been properly fuelled.

The breakfasts I have chosen for this article are some of my favourites but made healthier. pancakes, waffles, granola and muffins. All are gluten and dairy free.

Some are made in a matter of minutes while others are great to eat at the weekends where you have a little more time. All the recipes can be easily veganised, just read the notes for swaps and variations.

Rhubarb and ginger muffins

These muffins are a cross between granola, a flapjack and a muffin. It’s soft and crumbly and has a flapjack texture but with nuts and seeds, it tastes like granola. This freezes brilliantly, so you could make a batch and freeze for the week ahead. I like to eat one before a workout the oats are enough to fill me up till I get home. You can change up the fruit and use what’s in season, like raspberries and coconut, apples and cinnamon: pear and maple or cherry & almond.

This is a great breakfast where you can batch-cook the granola and pop it into a Kilner jar. It will last up to a couple of weeks. You could also layer the granola, yoghurt and jam in jars to enable you to take it to work if you are on the go. Again, swapping the fruit for any type of berries is fine, too. Use the exact same measurements as stated in the recipe. Some great fruit to try would be strawberry, raspberry or a forest fruit chia jam instead of cherries

I’ve eaten this with cold almond milk and used it with hot milk. It makes a super thick and delicious porridge packed with chunks of nuts and seeds. Just boil some milk, add a handful of the granola, cook for 5/6 minutes, and top with fruit.

Chocolate chip, raspberry and coconut pancakes

VEGAN II GLUTEN FREE II DAIRY FREE II SESAME FREE II PALEO

This is a great recipe for the weekend when you have more time. However, the pancake mixture can be made ahead of time and kept in the fridge for a few days. The raspberry yoghurt can be prepared too, so if you have the elements ready, it will only take a few minutes to cook the pancakes if you need to save time. I have even frozen these pancakes, taken them out of the freezer, and popped them into a toaster to heat up or in a frying pan.

Blackberry chia jam

This is a very versatile recipe, and it’s refined sugar-free too. You could use any soft fruit. Try strawberries, raspberries, or damsons. Seasonal fruit is always the best type of fruit to use. Take a look at what fruit is in season in the UK here. This is a great jam to use in baking too. It will keep in the fridge for a week. It really is worth making the recipe as this jam tastes so much nicer than the store-bought ones.

Apple and cinnamon buckwheat pancakes with maple roasted walnuts

This is a great recipe for the wintertime when apples are in season. The warming spices of cinnamon with the apple is a match made in heaven. You could use pears instead, which would be a great alternative. You can make both the pancake batter ahead of time and the nuts, too, as they keep well in an airtight jar.

Buckwheat can also be bought as wholegrain groats, cracked as flakes or cereal, and processed foods such as pasta. Delicious in salads, it lends itself to being mixed with other pseudo-grains such as quinoa. Buckwheat flour can be added to pancakes, muffins, blinis and soba noodles.

This is gorgeous to eat with any fruit and served with coconut yoghurt. This will keep up to 2 weeks in a Kilner jar. It is a real granola recipe. I find store-bought granola really measly as they add tiny amounts of nuts and seeds as possible to cut costs. So I prefer to make my own, so I know I’m not just eating glorified oats. I even eat this as a snack as it’s so delicious. Make this at the weekend, or when you are free. It literally takes 30 minutes to weigh the ingredients and cook in the oven. It’s so simple. This has a great balance of macros to make a perfect breakfast that will really satisfy you.

Carrot cake porridge

I love carrot cake so used the ingredients to create it as a healthy breakfast. This has cardamon seeds and mixed spice and so is perfect for autumn as its so warming. a friend of mine said this tasted like a hug in a bowl. When I eat porridge like this I will only need to eat once again in the evening as it fills me up all day. It’s a combination of oats and seeds ( complex carb), and coconut oil ( EFA’s) that really fills you up. Again it’s all about the balance of macros.

Beautiful and creamy. This is a great recipe for summer. I make the porridge and serve it with cold yoghurt and fruit. It’s such a delectable combination. I ALWAYS roast my oats first before I put the milk in. This brings out the flavour of the oats and is a gamechanger. You have NEVER tasted porridge like this before and only takes a few extra minutes in the saucepan. The normal porridge is just so gluey and bland. I’m here to shake up your tastebuds and get them dancing and singing!!. Berries are a great source of antioxidants and so is great for our skin and anti-ageing ladies!

Chocolate brownie pancakes

This has got to be my favourite decadent recipe. It tastes so chocolatey and is light and fluffy as pancakes should be. The chocolate ganache is just dreamy; you would be forgiven for thinking this tastes more like a dessert, granted! But you can eat this for breakfast yes the gods have spoken!!! The batter and ganache can be made a couple of days in advance to help you during the week. Despite preconceptions that too much chocolate can be bad for your health, getting your chocolate fix from cacao powder can actually be good for you. I only use cacao powder and not cocoa powder in all my recipes. here’s why.

Salted caramel, buckwheat pancake bowl with berries

Pancakes with a twist. Try it in a bowl instead of stacked! This would be fab to serve little kids, make mini pancakes and toss in some fruit and yoghurt. I think this is an enjoyable way to eat pancakes. It’s refined sugar-free too! The date caramel is delicious and can also be used on top of porridge or in baking.

You can absolutely make the pancake batter ahead of time or just batch cook the pancakes and pop it in the freezer. It is such a time-saving tip. Just pop them dry in a frying pan to defrost, and in minutes you have a breakfast fit for a goddess.
