Sometimes just a chocolate bar is what you need to brighten your day. Delicious chewy toffee, mixed with crispy puffed rice enrobed in dark chocolate, makes this nostalgic toffee crisp chocolate such a joy to eat. It’s also a little healthier than your average industrial chocolate bars and allergy-friendly ( minus the nuts).

Toffee crisp in the UK is a popular chocolate bar full of dairy and nasty ingredients, so I hope you enjoy this copycat version instead.

This recipe requires no cooking, and you can throw it together in ten minutes, how bloody fab is that!!! It’s also vegan, gluten-free, refined sugar-free and so god damn delicious! I keep these in the freezer as the bananas will turn brown if kept in the fridge for too long. You could swap the almond butter for peanut butter.

Rhubarb & ginger muffins

This recipe that I created was for a breakfast muffin, however there’s no reason why you cant enjoy them any other time of the day. They are perfect with a cuppa! They can also be frozen too once defrosted pop them in a hot oven for a few minutes to heat up. Serve them on its own or with coconut yoghurt.

Blueberry & lemon oat bars

Stunningly delicious oat bars that you could eat for breakfast as well as a snack during the day. They are gluten and dairy-free and can easily be made vegan by swapping the honey for agave.
